Katie is a Functional Nutritional Therapy Practitioner, Integrative Health Coach & accomplished public speaker. She's a busy single mum, living and working in the beautiful Northern Rivers of NSW, Australia. After completing her studies at The Institute for Integrative Nutrition (2016) and The Nutritional Therapy Association (2017) she founded Empowered Nutrition in Ballina.
Katie’s method is to empower her clients with the knowledge they need to make positive, lasting change.
Working with a wide variety of health conditions, she has a lot of experience working with restoring optimum digestive health in those suffering symptoms of indigestion, acid reflux, bloating and heartburn. Her focus is getting to the root cause of the problem, rather than just treating the symptoms.
Her special interest is in working to prevent and reverse type 2 diabetes. Yes, it is possible to reverse it! She has recently written a group program designed to get type 2s on the right path, which is available online and face to face. She is determined to play a big part in turning the tide on this epidemic of sugar related disease.
Katie's dietary preference is to base meals around whole, unprocessed foods. Preferring not to label a diet paleo, low carb, ketogenic, carnivore or something else, Katie will create a way of eating with you in mind that fits within your lifestyle and food preference. She is experienced in many dietary methods, including the use of intermittent fasting where appropriate.
One of her favourite sayings is “Every bite you take is either fighting disease or feeding it”. It’s a great reminder that we have a lot of power in our health. I have always considered myself to be healthy. I avoided eating fat and ate as little sugar as I could. But then in 2012 I was diagnosed (after some very painful incidents) with gallstones – a gallbladder filled with gallstones, large and small. I was told surgery was necessary and to eat a low fat diet. I didn’t like the idea of surgery and being told to eat low fat didn’t make sense when this is what I’d been doing and had ended up with gallstones. So I went to a Naturopath who put me on a regimen of herbs. After 6 months we rechecked and the stones had actually gotten larger!
To cut a long story short I tried a lot of different therapies but it wasn’t until I started to eat more fat and reduce my grain consumption that I stopped having the painful attacks. My brother had become interested in the Paleo diet several years before and had been in my ear about how great it was but I was sceptical. I’d been told my whole life that fat was bad. I’d been a yoyo dieter since the age of about 12 but looking at my situation I realised it wasn’t working.
It wasn’t until I had my son in 2013 that I really started taking my health seriously. How could I be sure I was doing the right thing for his health if I wasn’t sure the way I’d been eating had done me any favours? So I cut out grains altogether, as well as sugar and all processed foods, and started my journey on a whole food, gluten free, paleo-style diet.
By the end of 2014 I was hooked and eating 100% whole, unprocessed food and I felt great. My brain fog was gone and I had a LOT more energy. Even better, a repeat ultrasound showed my gallstones were shrinking! A year later and a repeat ultrasound showed only one gallstone left! I hadn’t had any sort of attack in over 2 years despite eating a moderately high fat diet. After many years of tinkering, these days my way of eating is a clean ketogenic style one that includes some intermittent fasting. This seems to suit my body right now, but I continue to check in and listen to my body to know what it is needing, as it changes.
The power of food to heal is amazing! I want to be able to share what changed my life and help others to feel this great too. So here I am. Let me help you. There is no one size fits all, but the secret is it's got to be whole foods, not processed.
