I don't make biscuits very often but my son felt like he wanted to look like everyone else, eating biscuits. I have talked to him about how fitting out is much better than fitting in. Be yourself because everyone else is taken... all that. But I also get it. When you're little (he's 6), you don't want to be different to the other kids.
So this recipe turned out looking just like other biscuits and the bonus is it is really yummy and simple to make!
You will need Almond Butter which you can easily make yourself - see here - or buy from the supermarket / health food shop.
Then it's just a matter of whizzing it all up in your food processor, or mixing it buy hand if you prefer, or the kids want to cook with you, pop them on a pan and then in the oven.
I think the next time I make it I might add some Macadamia nut pieces for a bit of added texture but they're really good as they are.

1 Cup Almond Butter
1 Cup Coconut Sugar
1 large egg, room temperature
1 teaspoon bi-carb soda
1 teaspoon vanilla extract
They'll keep in an airtight container for about a week, or in the freezer for a year.
