Carnivore Chicken Schnitzel

I'm sorry I don't have measurements for this. I just threw it together with what I had. Next time I make it I'll be more precise. I made my own pork crackle crumb with some leftover pork crackling. You will need to remove as much as the fat from it as you can so the end product is nice and crunch.

Ingredients

Chicken Breast

Egg

Pork Rind Crumb

Salt

Lard/Tallow or other preferred cooking fat

Directions

  1. Heat a pan on a medium to high heat and add enough fat to shallow fry your chicken
  2. Place chicken breast between two pieces of baking paper and pound with a meat hammer until approximately 5 mm thickness all over
  3. In a bowl whisk an egg
  4. In another bowl add pork crumb and salt
  5. Dip chicken in egg wash and allow to drip off excess
  6. Dip chicken in crumb and turn to coat
  7. Fry in fat until golden and turn to cook the other side until cooked through

Although not carnivore this is excellent with this mayo!

Notes

A delicious alternative to standard high carb chicken schnitzel, this option is low carb, carnivore, gluten free, and nut free!
