Cauliflower Mash

This is a favourite in our house. More tasty than mashed potato and much, much lower in carbohydrates, it's a winner. It's great with curries, steak...anything really. It can even be used to thicken soup if you have leftovers!

Cooking Time

5-7 minutes

Ingredients

1/2 a head of cauliflower

25g butter/coconut oil/preferred fat

1/2 teaspoon salt or to taste


Directions

  1. Cut cauliflower into florets
  2. Steam until tender - you want it soft but not mushy
  3. Place in a food processor with butter and salt and blend until a smooth mash, or mash all together by hand
