Coconut Custard


Prep Notes

There is no need to miss out on custard just because you're dairy free. Try coconut custard. Yum! I've given thermomix and stove top instructions.

This can easily be made ketogenic and diabetic friendly by using monkfruit or your sweetener of choice and leaving out the tapioca.

Cooking Time

7 minutes in the thermomix, longer on the stove

Ingredients

1 teaspoon of vanilla powder

400ml can coconut cream

100ml water

3 eggs

5g tapioca/arrowroot (optional)

1 Tablespoon of honey or if Diabetic or avoiding sugar - 2 Tablespoons of Xylitol, Monkfruit or your preferred sweetener

Directions

Thermomix (TM5)

  1. Place all ingredients in Thermomix bowl
  2. Put on auto recipe for custard and select 3-4 serves and normal consistency
  3. Turn on to cooking
  4. Ensure you pour out of the thermomix bowl as soon as it's done as it will continue to cook

Stove top

  1. Place all ingredients in a saucepan and whisk together
  2. Stir constantly over a low to medium heat until custard thickens
  3. Remove from the pot as soon as it's done so it doesn't continue to cook
