A lot of us are trying to limit our fructose/sugar intake. Natural sweeteners still impact our bodies negatively so in this recipe I've made a delicious chocolate that is full of good fats to fill you up and give you energy, without needing the sweetener that will raise your blood sugar. Knocks the chocolate craving on the head without the guilt.
You could easily use maple syrup in place of the stevia, but it would no longer be fructose free or ketogenic. I recommend green leaf stevia, not the refined white powder.

100g dessicated/shredded/chips of coconut (unsweetened)
7 Tbsp./150g coconut oil
2 Tbsp. raw cacao
1/2 tsp green leaf stevia powder / 1 Tablespoon Monkfruit or other preferred sweetener
6 drops of Peppermint Essential oil (ensure this is food grade) *optional and you could try other flavours
1. In a good food processor whiz the coconut until it's a fine powder or starts to come together.
2. Add in all other ingredients and mix well
3. Pour into chocolate moulds or flat on a tray if you prefer thin bark like pieces (and break it up afterwards)
4. Place in the freezer for 10-15 minutes until it's solid.
5. Enjoy! Store in the fridge (can be kept frozen for longer term storage)
