Fruit and Nut Raw Chocolate

This raw chocolate is super simple and really delicious.

I'm not a big fan of sultanas, and it's so hard to find them without a toxic oil used in the drying process, so I chose inca berries for my chocolate. But you could easily use sultanas if you like, and I've used goji berries in the past which is also a delicious choice. I love the tang of inca berries though. Also, feel free to swap for your preferred nut. There are no strict rules in this recipe. You could add coconut too.

Ingredients

  • 3/4 cup coconut oil
  • 1 cup cacao
  • 1/2 cup honey
  • 2/3 cup almond meal
  • 1/2 cup chopped macadamia nuts
  • 1/2 cup inca or goji berries
  • freeze dried raspberries (optional)

Directions

  1. Mix together coconut oil, cacao, honey and almond meal. Doing it in the food processor will ensure no lumps of cacao but I sometimes do it by hand and it's fine.
  2. Mix in the nuts and inca/goji berries and add a pinch of salt.
  3. Poor onto a tray lined with baking paper or into moulds.
  4. Sprinkle over freeze dried raspberries if desired. Toasted coconut would be nice too.
  5. Put in the freezer for 20 minutes and when solid break into pieces. Store in the fridge/freezer. Enjoy!
NB this will melt if left out of the fridge for too long
