I've put this in the Breakfast, Lunch & Dinner categories because who says you can't have pizza for Breakfast!?

This pizza base is so yummy, you'll never miss pizza again. You can make a few bases ahead of time and put them in the freezer so it's a quick meal for busy nights.

The toppings are totally up to you but be wary of the base sauce. A lot of pizza sauces have added sugar. I have used Gevity Rx's BBQ sauce and it's delicious as a pizza sauce. I have these available in my clinic for purchase if you can't buy them locally.

I have provided both stovetop/microwave and thermomix directions. Enjoy!

Cooking Time

12 minutes for the base. 5-10 more minutes if topping.

Yields

1 large pizza

Ingredients

  • 50 grams cream cheese
  • 170 grams mozzarella, rough chunks
  • 1 whole egg (50-60g)
  • 80 grams Almond Flour
  • 2 pinches salt
  • 1/2 teaspoon ½ tsp mixed herbs or your preferred herbs (optional)

Directions

Stove Top / Microwave

  • Preheat your oven to 190°C
  • Heat cheeses in a saucepan on the stove, stirring until melted. Or place in a microwave safe bowl, warm until melted and stir together
  • Mix in egg, almond meal, salt and herbs
  • Remove dough and shape into a rough ball
  • Place between two sheets of baking paper and roll out into desired pizza size and thickness. It will not change much during cooking
  • Remove the top sheet of baking paper and place in the oven for 12 minutes or until brown
  • Top with your favourite toppings and bake again until toppings are cooked

Thermomix

  • Preheat your oven to 190°C
  • Chop the mozzarella and cream cheese - 10 sec / speed 6 / mc on
  • Scrape down the bowl and heat - 80°C / speed 2 / 3 mins / mc on
  • Mix - 10 sec / speed 4 / mc on
  • Add egg, almond meal, salt and herbs
  • Mix - 20 secs / speed 3 / mc on
  • Remove dough and shape into a rough ball
  • Place between two sheets of baking paper and roll out into desired pizza size and thickness. It will not change much during cooking
  • Remove the top sheet of baking paper and place in the oven for 12 minutes or until brown
  • Top with your favourite toppings and bake again until toppings are cooked

**If you're wanting to save this to cook another night, cook the base and then freeze, ready to defrost and top on the day you want to eat it.

Notes

This is a great low carb and ketogenic option for those wanting to lose weight or reverse type 2 diabetes. It's gluten free and grain free.
