I made these as an experiment. All my bliss balls usually contain cacao and I wanted something different. These were a hit with my guests, and I polished off the leftovers pretty quickly. I love them after they've been in the freezer for long enough to get a bit firm, but not totally frozen. Chewy deliciousness!
12 (but it depends on how big you make them)
1 cup desiccated coconut
1 cup of almond meal
1 Tablespoon of coconut oil
2 ½ Tablespoons of honey
6 drops each of lemon and lime essential oils (make sure they are approved for consumption - ask me about mine)
extra coconut for coatingPut all ingredients into a food processor and mix until it's all coming together in a dough like consistency
Roll into balls about the size of a 50c piece
Roll balls in extra coconut to coat
Place in fridge or freezer. They will store for ages in the freezer. Get them out about 1/2 an hour to an hour before serving, depending on how soft you like them. They're good right out of the fridge too.#paleo #blissballs #essentialoils #youngliving #healthysnacks #glutenfree #dairyfree
