Probiotic Jelly - Keto Friendly

I loved jelly as a kid but those little jelly sachets are so packed full of sugar and other rubbish I hadn't thought about it too much as an adult. But after playing with one of my favourite drinks and gelatin powder, I discovered I can enjoy jelly as a nutritious snack. Gelatin is so good for you for many reasons (check my blog). You could use any drink you like really but this particular drink is full of probiotics and is sugar. You need to add the filtered water before the blueberry drink so the heat doesn't destroy the probiotics. You could also just make this with juice in place of the water and the blueberry drink

Ingredients

***if using juice, just use it in place of the room temp water and concentrate

Directions

  1. Place gelatin in a bowl
  2. Pour over boiling water and whisk until gelatin is dissolved
  3. Mix in filtered water
  4. Stir through blueberry concentrate
  5. Pour into moulds and add fruit if using
  6. Refrigerate until set (approximately 30 minutes)
