These are great lolly replacements for kids with real fruit and the goodness of gelatin. You can experiment with different types of fruit. I've done strawberry, mango, passion fruit and banana with success. I liked blueberry too but my 3yo didn't because there were tiny bits of skin. Apple didn't work so well. You could double the recipe if you have a lot of fruit. They freeze well.
I have included a stove top version and a thermomix version.
I recommend always using organic fruit if you can. You can save money by buying it frozen and defrosting for the recipe.

Depends on how big your moulds are
160 grams of fruit (strawberry, mango or passion fruit work well)
2 Tablespoons of honey (you might need another tablespoon if you're making lemon or lime lollies)
3-4 Tablespoons of gelatin (I like great lakes or changing habits. 3 will make a squishy gummy, 4 will make a more firm one)
In a food processor or high speed blender puree the fruit until it's smooth
Add in the gelatin and blend again until well mixed
Add to a saucepan on a low heat and add honey
Stir constantly until gelatin has dissolved and the mixture is smooth and runny (it doesn't need to boil)
Pour into moulds straight away. I like silicon moulds
Place in the freezer for about 15 minutes until solid
Store in the fridge or freezer
Put fruit and gelatin in the bowl of your thermomix
Blend until smooth
Add honey and for 20 seconds on speed 4
Scrape down sides and repeat
Scrape down again and heat - 60 degrees, 8 minutes, speed 1
Ensure all gelatin has dissolved and if not, do for another couple of minutes
Pour into moulds straight away. I like silicon moulds
Place in the freezer for about 15 minutes until solid
Store in the fridge or freezer
* if, when they come out of the freezer, they are not sweet enough, warm them to liquid again and stir in some extra honey. Refreeze
