Steamed Egg "Pudding"

This dish can be made sweet or savoury. It's a traditional Chinese dish, but I'm not Chinese and probably don't do it the traditional way. It's still yum though.

I've put both the sweet and savoury options below. If you're using your own bone broth make sure you've added salt and other spices for flavour and use your broth to replace the water in the recipe.


You will need:

  • a bowl - glass, ceramic or stainless steel.
  • a large pan or wok with a lid.
  • a stick blender or a fork

Ingredients

The Savoury Version

2 eggs

Approximately 200ml water (or equivalent liquid to egg quantity)

1 teaspoon of Concentrated Bone Broth (I like one of the flavoured ones from here: http://gevityrx.com.au/)


The Sweet Version

2 eggs

Approximately 200ml water (or equivalent liquid to egg quantity)*

1 Tablespoon of honey / Xylitol / Monkfruit

1 Tablespoon of melted butter (optional)

1/2 teaspoon of Vanilla powder or half a tablespoon of cocoa powder for a chocolate version


* I think it would also be delicious to replace some of the water with cream or coconut cream but I haven't experimented with this yet. Tag me if you do

Directions

  1. Put roughly 200ml of water in a pan and bring to a simmer
  2. Put all ingredients in your bowl (or jug if you're using a stick blender) and whisk until combined (or blend and then pour into your bowl)
  3. Place the bowl in the centre of your pan in the water and put the lid on
  4. Make sure it's only simmering for the duration of the cooking. This should take approximately 5-10 minutes (this will vary with the thickness of your bowl, the amount of water in your pan, the size of your pan etc. so you will need to monitor it closely the first couple of times to see how long it is for yours)
  5. It's done when it's cooked on top and wobbles a bit like jelly

Notes

I'd love to hear what you think of this dish. It's a fantastic carnivore option if you're sticking to carnivore ingredients. But is also just a simple gluten free, dairy free breakfast or snack idea.
