Super Simple Banana Muffins

This recipe is a super simple way to use up leftover bananas. Throw all ingredients in a food processor and pop in the oven. So simple! And it's gluten free, dairy free, and refined sugar free.

Ingredients

3 overripe bananas

125g coconut oil

2 eggs

1 Tablespoon honey

1 teaspoon vanilla extract

2 cups blanched almond meal

1 teaspoon of bi-carb (baking soda)

Directions

  1. Preheat oven to 180°C
  2. Grease a 12 muffin tray
  3. Put all ingredients into a food processor and mix until smooth
  4. Spoon mixture evenly between the muffin holes
  5. Cook for 15-20 minutes. Until the top has browned and a skewer poked in the middle comes out clean
