Zucchini Pikelets

Ingredients

1 Large Zucchini

1 Rasher of bacon

3 Eggs

1 tablespoon Coconut Flour

Directions

1. Chop Zucchini into chunks. 

2. Dice Bacon. 

3. Put all ingredients in a food processor and blend until fairly smooth (it's ok and nice to have some little pieces of bacon).

4. Heat a pan with a little coconut oil or other good cooking fat over a medium heat.

5. Spoon Pikelet sized mixture into the pan.

6. Flip once it's dry at the edges and small bubbles are appearing on the surface.

Notes

This is delicious under an egg or with avocado. It's also a great quick snack if you cook extra and store in the fridge or freezer.
