Paleo Mongolian Beef


Prep Notes

This is an easy and tasty dinner (or lunch, or even breakfast) the whole family will love. It's low in carbs and free from grains, gluten, dairy, refined sugar and nightshades. It's my 6yo's current favourite and he loves to take it for school lunch in a thermos pot. You can cook this in the thermomix, on the stove, or in a slow cooker or pressure cooker.

Cooking Time

8 mins - 20 mins (depending on cut of beef)

Ingredients

30g ginger peeled

2 cloves of garlic peeled

1 onion, sliced

500g beef strips (if you are using a cheap cut of beef you will want to use the slow/pressure cooker option)

20g coconut oil / preferred animal fat

20g apple cider vinegar

1 cup sliced mushrooms & other veg of choice

1 tablespoon tapioca flour

70g coconut aminos

Directions


Thermomix

  1. Place ginger and garlic in TM bowl and chop 4 sec, speed 7. Scrape down sides of bowl
  2. Add oil/fat, onion and beef and saute for 8min varoma
  3. Add all other ingredients and cook 5 min varoma
  4. Serve with cauliflower rice, mash or steamed veg


Slow / Pressure Cooker

  1. Grate ginger and mince garlic (or place in a food processor and mince)
  2. Place all ingredients into cooker and mix well
  3. Cook in slow cooker for approximately 8 hours, pressure cooker for 15 minutes (cooking time will vary depending on cut of meat)
  4. Serve as per Thermomix instructions


Stove Top

  1. Grate ginger and mince garlic (or place in a food processor and mince)
  2. Heat a frying pan over a medium to high heat
  3. Melt oil/fat
  4. Fry ginger, garlic and ginger until onion is starting to soften
  5. Add beef and brown
  6. Add otherĀ  ingredients, mix well and continue to stir for approximately 8 minutes until beef is cooked through
  7. Serve as per thermomix instructions
