
Cauliflower has to be one of my favourite vegetables. Now that it’s in season, it’s the best time to talk about it and share my favourite things to do with it. It’s delicious and nutritious and there are so many ways you can use it. You can mash it, rice it, roast it, make a sauce with it, make soup with it, fry it, steam it, boil it, eat it raw… the list goes on.
Cauliflower is one of the best sources of vitamin C. It’s also high in manganese. Other nutrients it contains are: folate, pantothenic acid, choline, omega-3 fats, manganese, phosphorus, biotin, protein, potassium, magnesium, vitamins B1, B2, B3, B6, & is high in vitamin K.
Cauliflower has been shown to reduce the risk of colorectal and prostate cancers.
It’s very low in carbohydrates at 5g per 100g.
